Crawfish Etoufee - cooking recipe

Ingredients
    1/4 cup butter
    2 tablespoons olive oil
    1/4 cup flour
    1 medium onion, chopped
    2 celery ribs, chopped
    1 green bell pepper, chopped
    4 garlic cloves, minced
    2 teaspoons cajun seasoning
    1/2 teaspoon ground red pepper
    1 (14 ounce) can chicken broth
    1/4 cup chopped parsley
    1/4 cup chopped chives
    2 lbs cooked peeled crawfish tails
Preparation
    melt butter with oil in a dutch oven.
    stir in flour and cook stirring constantly 5 minutes or until caramel colored.
    add onion and next 6 ingriedients and cook 5 more minutes.
    add chicken broth, parsely and chives.
    cook 5 minutes.
    stir in crawfish and cook 5 more minutes.
    serve with hot cooked rice.
