Basque Tomatoes - cooking recipe
Ingredients

8 ripe medium tomatoes
1/2 cup chopped parsley
2 -3 teaspoons olive oil
2 -3 tablespoons tarragon vinegar
1 teaspoon Dijon mustard
1 garlic clove, minced
1/2 teaspoon sugar
1 teaspoon salt
1/4 teaspoon pepper
sliced black olives (to garnish)
Preparation

Slice tomatoes and arrange in a shallow dish. Sprinkle with parsley.
Combine remaining ingredients, except olives, drizzle over tomatoes.
Garnish with olives.
