Lobster Salad - cooking recipe

Ingredients
    5 lbs cooked lobster meat
    2 yellow bell peppers, seeded and diced
    3 stalks celery, diced
    1 large white onion, diced
    1 cup mayonnaise
    1 tablespoon ground black pepper
    2 avocados
    12 cherry tomatoes (for garnish)
    2 cups of fresh arugula
Preparation
    In a large bowl, mix together the lobster meat, peppers, celery, onion, mayonnaise and pepper until combined. Chill before serving. Spoon mixture into a ramekins to mold into shape, gently place into center of a plate maintaining it's form.
    slice avocado and place in center of plate.
    Spoon mixture into ramekins to mold into shape and chill.
    Gently place lobster salad filled ramekin on top of sliced avocado being careful to keep salad in its molded form.
    Garnish plate with sliced cherry tomatoes and cocktail sauce.
    Top with fresh arugula.
