Zucchini Carrot And Butter Bean Quinoa - cooking recipe

Ingredients
    1 tablespoon olive oil
    2 1/2 cups shredded zucchini
    1 1/2 cups shredded carrots
    3 garlic cloves, minced
    1 (15 ounce) can butter beans, drained and rinsed
    1/2 cup dry white wine
    3 cups hot cooked quinoa
    1/2 cup grated parmesan cheese
    3 tablespoons minced fresh chives
    salt and pepper
Preparation
    In large skillet, saute zucchini and carrots in oil, 2-3 minutes. Add garlic and cook, 30 seconds.
    Add beans and wine. Cook, stirring for 1 minute.
    Add quinoa, half of the cheese and 2 tablespoons of the chives, tossing gently to combine.
    Cook 1-2 minutes to blend the flavors. Season to taste with salt and pepper. Serve with remaining chives and cheese.
