World Champion Bottled Salsa - cooking recipe

Ingredients
    14 cups tomatoes, chopped (romas whole, others seeded)
    3 cups onions, chopped
    1/2 cup serrano pepper, chopped very fine (whole, seeds included)
    1 cup jalapeno, chopped very fine (whole, seeds included)
    5 garlic cloves, pressed
    3 tablespoons salt
    1/2 cup vinegar
    1/2 cup tomato sauce
    1 tablespoon chili powder
    1 tablespoon garlic powder
    3/4 teaspoon cumin
    2 bunches cilantro, chopped
Preparation
    Mix tomatoes, onions, serrano peppers, jalapeno peppers, pressed garlic, and salt.
    Simmer approximately 5 minutes, then strain off and discard 5°C liquid.
    Add vinegar, tomato sauce, chili powder, garlic powder, cumin, and cilantro. Mix well and simmer another 5 minutes.
    Bottle and process in a water bath for 15 minutes.
