Cucumber Pineapple Salsa With Dried Cranberries - cooking recipe

Ingredients
    1 large cucumber, peeled seeded and chopped
    1/2 cup pineapple, coarsely chopped
    1/4 cup dried cranberries
    1/4 cup vidalia onion, fine chopped
    2 2 tablespoons parsley or 2 tablespoons mint, chopped
    1 jalapeno, seeded and minced (optional)
    2 tablespoons lime juice
    1 tablespoon white vinegar
    1 garlic clove, finely minced
    1/2 teaspoon fresh grated gingerroot
    salt and pepper
Preparation
    Combine all ingredients chill and serve with grilled meats or use as a dip for chips.
