Sauce Batarde - cooking recipe

Ingredients
    3 tablespoons butter
    4 tablespoons flour
    2 cups water
    3 egg yolks
    1/3 cup milk
    1 teaspoon lemon juice
    salt and pepper
Preparation
    Melt the butter in the saucepan and add flour, making a roux. Cook for 1-2 minutes then add the water. Bring to a boil and cook for 5 more minutes.
    Beat the egg yolks and the milk. Combine with the first mixture, beating constantly with a whisk. Season to taste.
    Strain the sauce through a very fine sieve or several layers of cheesecloth. Add lemon juice just before serving.
