Eggplant Clam Casserole - cooking recipe
Ingredients

2 eggplants
2 cups heavy cream
2 (7 1/2 ounce) cans minced clams
2 tablespoons lemon juice
2 cups Ritz crackers
4 tablespoons butter
Preparation

peel and dice eggplant
crush ritz crackers
layer in greased 1 1/2 quart casserole layer of eggplant
clams milk and lemon juice mixed together
then cracker crumbs
do this 2 times
dot with butter
bake at 360 for 40 minutes.
