Maya Angelou -- Her Childhood Favorite, Grandmother'S Red Rice - cooking recipe

Ingredients
    3 slices bacon
    1/2 cup chopped onion
    1/4 cup chopped red pepper
    1 (14 1/2 ounce) can chopped tomatoes (reserve the juice)
    1 tablespoon tomato paste
    1/4 teaspoon salt
    pepper
    2 cups cooked rice
    1 cup tomato juice and water
Preparation
    Fry the bacon and then chop the cooked bacon, leaving about 1 TBS of bacon grease in the pan (cool the remaining grease for any use later).
    Cook the chopped onion and peppers a few minutes. Then add everything else (having drained the tomato juice from the can and topped off with water to make 1 cup of liquid).
    Bring to a boil and cook 3-4 minutes. Stir.
    Turn the heat down to low, cover and cook another 15 minutes or so.
