Ham Apple And Quinoa Salad - cooking recipe

Ingredients
    3 cups cooked quinoa
    1 1/2 cups diced lean ham
    1 large tart apple, peeled and diced
    1 cup thinly sliced celery
    3 tablespoons olive oil
    2 tablespoons white wine vinegar
    1 1/2 tablespoons Dijon mustard
    2 teaspoons honey
    salt and pepper
    3/4 cup chopped toasted pecans
Preparation
    In a large bowl combine quinoa, ham, apple, celery and celery leaves.
    In a small bowl, whisk together oil, vinegar, mustard and honey. Add to quinoa and gently toss to coat.
    Season to taste with salt and pepper. Cover and refrigerate at least 30 minutes. Serve topped with pecans.
