Ingredients

2 cups chopped dried tomatoes
1/2 cup olive oil
1 large clove garlic
2 cups fresh basil
1 tablespoon dried oregano
1/4 cup pine nuts (optional)
Preparation

Combine ingredients in a blender or food processor and puree.
Pack pesto tightly into a glass jar and cover with a thin layer of olive oil. Use as needed and keep refrigerated.
Great on pasta, grilled chicken and vegetables.
