Oatmeal Date Muffins - cooking recipe

Ingredients
    1 cup rolled oats
    2 cups low-fat buttermilk
    1 2/3 cups whole wheat flour
    3/4 cup packed brown sugar
    2 tablespoons canola oil
    1 teaspoon baking powder
    1 teaspoon baking soda
    1 teaspoon salt
    2 eggs, lightly beaten
    2/3 cup chopped dates
Preparation
    Combine oats and buttermilk and refrigerate for 8 hours.
    Preheat oven to 350.
    Combine flour, buttermilk mixture, brown sugar, canola oil, baking powder, baking soda, salt and eggs in large bowl.
    Beat with a mixer on medium speed until smooth.
    Fold in dates.
    Bake in muffin tins at 350 for 12-15 minutes.
    Cool muffins on wire rack.
