Loaded Fried Potatoes - cooking recipe

Ingredients
    2 tablespoons vegetable oil
    12 ounces Simply Potatoes® Shredded Hash Browns
    1/4 cup sliced green onion
    1/2 cup diced red bell pepper
    1/4 cup sun-dried tomato
    1/4 cup chopped fresh cilantro
    1/2 cup shredded cheddar cheese
    1/4 cup bacon bits
    fresh cilantro leaf, for garnishing
Preparation
    Heat vegetable oil in a large skillet over medium heat. Add hashbrowns, onions, peppers, tomatoes, and chopped cilantro. Cook for 10-15 minutes, turning frequently, until potatoes are golden brown and peppers are fork tender. Remove from heat and place in a casserole dish. Sprinkle with cheese and bacon bits. Garnish with fresh cilantro sprig.
