Alan Jackson'S Favorite Chicken Salad - cooking recipe

Ingredients
    4 (6 ounce) chicken breasts
    46 ounces pineapple juice
    2 tablespoons honey
    1 teaspoon vinegar
    1/2 cup slivered almonds, toasted
    3/4 cup mayonnaise
    1 cup dried sweetened cranberries (optional)
    sea salt
    pepper
    lettuce leaf
Preparation
    Bring chicken and next three ingredients to a boil. Simmer for 45 minutes. Remove chicken and cool for 10 minutes.
    Shred chicken with two forks.
    Mix chicken, almonds, cranberries, and mayo. Add salt and pepper to taste.
    Serve on lettuce leaves.
