Ingredients

8 ounces cream cheese, room temperature
1/2 pint heavy whipping cream
2 (3 ounce) packages lemon Jell-O gelatin
1 (3 ounce) package cherry Jell-O
1 (3 ounce) package lime Jell-O gelatin
16 ounces crushed pineapple, drained
16 ounces fruit cocktail, drained
Preparation

Dissolve cherry jell-o and lime jell-o as directed and refrigerate both in separate containers ( ice cube tray size is perfect ) until firm. Dissolve lemon jell-o as directed and refrigerate until thickened but not set. In a large bowl whip the cream and add the softened cream cheese until smooth. Fold in the lemon jell-o, pineapple and fruit cocktail. Cut up the cherry and lime jello into cubes and fold into the mixture. Pour into a 3 quart mold and refrigerate.
I listed 60 minutes as the prep time but I usually make the cherry and lime jell-o the night before I want to prepare this to make it easier. I hate waiting for jell-o to set!
