2 cups flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/3 cup vegetable oil
3/4 cup sugar
1 teaspoon vanilla
1 egg, plus enough milk to make 1/3 cup
16 ounces cream cheese, softened
1 teaspoon vanilla
3/4 cup powdered sugar
1/2 cup water
1/2 cup sugar
1/2 cup orange juice
1 1/2 tablespoons cornstarch
your choice mixed fruit
Preparation

Mix flour, powder, salt , oil, 3/4 cup sugar, 1 tsp vanilla, and egg/milk mixture together. Press into greased and floured 9 x 13 pan. Bake at 350 degrees for 10 minutes. Cool.
Beat together cream cheese, powdered sugar and 1 tsp vanilla. Spread over cooled crust.
Top with your choices of fruit. My favorite is a large mixture of red and green grapes, fresh cherries, kiwi, strawberries, blueberries, cantaloupe and honeydew.
Bring water, 1/2 cup sugar, orange juice and cornstarch to a boil over medium heat. Cool for a few minutes and then pour over fruit. Chill until ready to serve.
