Better Vegan Nacho Cheese Sauce - cooking recipe

Ingredients
    1/2 cup cashews, soaked overnight in water then drained
    1 cup unsweetened soymilk
    1 garlic clove, peeled
    1/2 small white onion, chopped
    1/2 small red bell pepper, chopped
    1 tablespoon fresh lemon juice
    1 tablespoon white miso
    1/4 teaspoon smoked paprika
    2 tablespoons nutritional yeast
Preparation
    Place all ingredients in blender jar and process until very smooth.
    Pour into a small saucepan and bring to a simmer. Stir constantly until thickened.
