Ingredients

8 cups roma tomatoes, halved
1/3 cup olive oil
1 teaspoon salt
1/2 teaspoon pepper
Preparation

In a large bowl, toss tomatoes with oil, salt and pepper.
Spread on a baking sheet and roast at 400* for 20-30 minutes, stirring after the first 10 minutes.
Let cool until thickened.
