Gold Nugget Fried Potatoes - cooking recipe

Ingredients
    2 leftover baked potatoes
    1/2 teaspoon salt
    canola oil (for frying)
Preparation
    Heat about 1 1/2 cups of oil in a medium sized sauce pan or deep fryer until hot but not smoking.
    While oil is heating, peel and dice potatoes into bite sized chunks ( for even cooking, cut in equal sized pieces ).
    When oil is hot, add potatoes pieces a few at a time and fry until golden brown.
    Drain on paper towels, and salt immediately.
