Joe'S Coonass Red Beans & Rice - cooking recipe

Ingredients
    1 lb dried kidney beans
    1/4 cup olive oil
    1 large onion, chopped
    1 green bell pepper, chopped
    2 tablespoons minced garlic
    6 cups water
    2 bay leaves
    1/2 teaspoon cayenne pepper
    1 teaspoon dried thyme
    1/4 teaspoon dried sage
    1 tablespoon dried parsley
    1 teaspoon cajun seasoning
    1 lb andouille sausage, sliced
    2 cups long grain white rice
Preparation
    Rinse beans, and then soak in a large pot of water overnight.
    Combine onion, bell pepper, and garlic in bottom of crock pot.
    Rinse beans, and transfer to crock pot with 6 cups water. Season with bay leaves, cayenne pepper, thyme, sage, parsley, and Cajun seasoning.
    Add sliced sausage into beans, and stir.
    Set crock pot for 8 hours slow cook time.
    Serve over cooked rice.
