Akrotiri: Village Salad - cooking recipe
Ingredients

2 tomatoes
1 medium cucumber, peeled
1/2 small red onion, thinly sliced
1/4 cup feta cheese
1/2 cup whole kalamata olive, pitted
1 tablespoon chopped fresh parsley
2 tablespoons olive oil
1 teaspoon oregano
1 tablespoon lemon juice
1 tablespoon white wine vinegar
Preparation

Cut the tomatoes into wedges and layer in the bottom of a glass bowl.
Slice the cucumber and layer on top of the tomatoes.
Top with thinly sliced red onion, feta, olives and parsley.
Whisk the remaining ingredients together and pour on the salad.
