Lentils With Chorizo & Red Wine - cooking recipe

Ingredients
    5 ounces green lentils or 5 ounces brown lentils
    3 onions, sliced
    1 garlic clove, crushed
    2 cups chicken stock
    2 teaspoons red wine vinegar
    3/4 cup red wine
    3 ounces chorizo sausage, roughly sliced
    1 tablespoon parsley, chopped
    2 sprigs thyme
    salt and pepper
Preparation
    Fry the onion and garlic in a little oil then add the lentils, red wine, stock, vinegar and thyme.
    Simmer gently for 30 minutes until tender, add the chorizo for the last 5 minutes of cooking time. Season with salt and pepper.
    Stir through the parsley.
    Serve with lots of crusty bread.
