Fish In Herb Marinade - cooking recipe

Ingredients
    1 onion, finely chopped
    2 garlic cloves, finely chopped
    2 teaspoons mixed herbs
    6 tablespoons olive oil
    1/2 lemon, juice and zest
    4 white fish fillets
    2 tablespoons sunflower oil
Preparation
    For the marinade, blend the onion, cloves garlic, herbs, olive oil and zest of 1/2 lemon.
    Pour over the fish fillets, cover and leave to marinate in the fridge for 30 minutes.
    Heat the oil in a large frying pan.
    Remove the fish from the marinade and cook for approximately 4-5 minutes on each side.
    Add the remaining marinade to the pan and cook gently for 5 minutes.
    Serve on a leafy salad with new potatoes or noodles.
