My Husband'S Favorite Carrot Cake - cooking recipe
Ingredients

4 eggs
2 cups sugar
3 cups carrots, grated
2 cups self rising flour
1 1/2 cups vegetable oil
2 teaspoons cinnamon
1 cup pecans, chopped
Frosting
confectioners' sugar
1/2 cup pecans, chopped (optional)
1 (8 ounce) package cream cheese, softened
1/2 cup butter, softened
2 teaspoons vanilla
Preparation

Preheat oven to 350F and grease and flour baking pan.
Blend sugar and oil.
Add eggs,one at a time.
Add flour,carrots,cinnamon and nuts.
Mix thoroughly.
Pour into prepared pan.
Bake for 30-35 minutes.
Cream butter and cheese.
Add sugar,one cup at a time.
Add nuts and vanilla.
Mix well.
