Healthy, Fluffy Whole Wheat Waffles (Vegan Option) - cooking recipe

Ingredients
    2 cups whole wheat flour
    1/2 cup ground flax seeds
    1/4 cup vital gluten (or oat bran or wheat bran, your choice)
    3 tablespoons baking powder
    3/4 teaspoon salt
    1/4 cup sugar (I use 6-8 drops liquid Stevia)
    2 cups milk (I use soy milk)
    3 eggs (I use Ener-G egg replacer for 3 eggs)
    1/3 cup unsweetened applesauce
    1 teaspoon vanilla
    1 1/2 cups pureed fruit (fresh or frozen. if it is frozen fruit with syrup, use less or your batter will be too runny)
Preparation
    In a large bowl, combine the flour, flax, vital gluten, baking powder, and salt. Mix well.
    Add the sugar (or Stevia).
    Stir in the milk, eggs, applesauce, and vanilla. Add the fruit.
    Pour over a waffle iron and cook thoroughly.
