Armenian Bean Salad - cooking recipe
Ingredients

1/2 cup thinly sliced onion
3 -4 cups white northern beans
1/2 cup finely chopped green pepper
1/2 cup minced parsley
1/3 cup lemon juice
1/4 cup olive oil
pepper
Hungarian paprika (or allspice or cumin)
finely chopped tomatoes (optional)
Preparation

Sprinkle onions with salt and work with your fingers until juicy.
Toss with remaining ingredients except tomatoes.
Cover and refrigerate. Toss again before serving and add tomatoes if desired.
