Migas - cooking recipe
Ingredients

4 eggs or 1 cup egg substitute
1 green onion, chopped
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper
2 tablespoons fresh jalapenos, chopped fine
2 tablespoons monterey jack cheese, grated
2 tablespoons cheddar cheese, grated
1 tablespoon butter
1/2 cup tortilla chips, crumbled
Preparation

In a bowl combine eggs, salt and pepper; scramble. Stir in onion, cheeses, and jalapeňo.
Heat butter in a covered skillet over medium heat. Pour in egg mixture and cook about 30 seconds, covered.
Stir up well, cover, and cook another 30 seconds.
Sprinkle with crumbled tortillas, cover and cook 20 seconds or to desired doneness.
Serve with warm flour tortillas, black beans and salsa.
