Duck And Apple Loaf - cooking recipe

Ingredients
    1 1/2 cups flour
    1 1/2 teaspoons baking powder
    3 eggs
    1/3 cup olive oil
    1/3 cup milk
    4 ounces gruyere cheese, grated
    8 ounces fresh figs, chopped
    5 ounces smoked duck breast, slices fat removed shredded
    2 apples, peeled diced
    salt and black pepper, to taste
Preparation
    Preheat oven to 350 degrees F.
    Sift together the flour and baking powder. In a bowl, beat the eggs, oil, and milk together. Season with salt and pepper.
    Carefully fold the egg mixture into the flour to make a smooth batter. Add the cheese, figs, duck meat and apples. Stir gently.
    Lightly butter a loaf pan and dust with flour. Pour in the mixture.
    Bake for 50 minutes. Check for doneness by sticking the blade of a knife into the loaf-it should come out dry.
    Cool the loaf before removing from the pan. Cut into small cubes and serve.
