Ingredients

1 bunch beet
1/4 cup cider vinegar
1 tablespoon sugar
1 tablespoon olive oil
1/2 teaspoon dry mustard
salt & pepper
Preparation

While beets are cooking (steam or roast), combine remaining ingredients in a ziplock bag.
Cool, peel, and slice beets. Add to vinaigrette. Marinate at least 1/2 hour at room temperature. Store any leftovers in fridge.
