Chocolate Cherry Nut Muffins - cooking recipe

Ingredients
    2 cups flour
    1/2 cup sugar
    1 tablespoon baking powder
    1/2 teaspoon salt
    1 tablespoon lemon zest, grated
    3/4 cup semi-sweet chocolate chips, miniature
    1 cup cherries, pitted and chopped (about 22)
    1/2 cup almonds, slivered and blanched
    1 cup milk
    1/3 cup oil
    1/3 cup butter, melted and cooled
    1 egg, beaten lightly
Preparation
    In a bowl, sift together the flour, sugar, BP and salt.
    Stir in the zest, chips and almonds.
    Combine the mixture well and stir in the chopped cherries.
    In a small bowl, whisk together the milk, oil, butter and egg.
    Add this to the flour mixture.
    Stir until batter is just combined.
    Fill sprayed muffin cups.
    Bake at 400 deg. for 20-25 minutes.
    Makes 15 muffins.
