Creamy Mushroom Potato Bake - cooking recipe

Ingredients
    2 1/2 - 3 lbs white potatoes, peeled
    1 onion, finely chopped
    1/2 lb fresh mushrooms, chopped
    3 tablespoons butter or 3 tablespoons margarine, divided
    1/2 cup sour cream
    1 teaspoon salt
    1/2 teaspoon pepper
    1/4 cup grated parmesan cheese
Preparation
    In a saucepan of boiling salted water, cook potatoes until tender; drain and mash.
    In a skillet, melt 2 tablespoons butter; saute onion and mushrooms for 3-4 minutes or until tender.
    Stir into potatoes; add sour cream, salt, and pepper; mix well.
    Spoon into a greased 2 quart baking dish.
    Sprinkle with Parmesan.
    Dot with remaining butter.
    Bake, uncovered at 400 degrees for 20-25 minutes or until heated and golden brown.
