Hot And Sour Chicken And Rice Soup - cooking recipe

Ingredients
    3 (14 ounce) cans chicken broth
    1 1/2 cups quick-cooking rice
    1 lb chicken breast, diced
    1 1/2 teaspoons minced fresh ginger
    1 tablespoon hot chili oil
    1 tablespoon rice wine vinegar
    1 bunch scallion, sliced
Preparation
    Heat chicken broth, rice and 3 cups water to a boil. Add chicken to soup. Reduce heat to medium low, cover, and cook until rice is tender and chicken is cooked.
    Add ginger, chile oil, vinegar and scallions and cook 2 minutes to blend flavors.
