Vegetarian Black Bean Chili - cooking recipe
Ingredients

2 cups sweet onions, chopped
2 tablespoons canola oil
1/2 lb mushroom, sliced
1 large green pepper, chopped
1 large yellow pepper, chopped
1 large red pepper, chopped
3 garlic cloves, minced
2 (15 ounce) cans black beans, rinsed and drained
2 (14 1/2 ounce) cans diced tomatoes, undrained
1 (15 ounce) can tomato sauce
1 (6 ounce) can tomato paste
2 tablespoons brown sugar
1 tablespoon chili powder
2 teaspoons ground cumin
1 dash hot pepper sauce
Preparation

In a large pot, saute onions in oil for 5 minutes.
Add mushrooms, peppers, and garlic; saute 5-6 minutes, until vegetables are crisp-tender.
Stir in remaining ingredients; bring to a boil. Reduce heat; cover and simmer 20-25 minutes, until heated through.
