Mandarin Orange Vinaigrette - cooking recipe

Ingredients
    8 ounces mandarin oranges
    1/4 cup red wine vinegar or 1/4 cup cider vinegar
    1/4 teaspoon salt
    1/4 teaspoon black pepper
    1 tablespoon honey
    2/3 cup vegetable oil
Preparation
    Drain the oranges and put them in a blender or food processor. Add the vinegar, salt, and black pepper. With the motor running, add the honey and oil in a thin stream through the feed tube. Process until thoroughly blended.
    Serve at once or cover and refrigerate until ready to serve, up to 2 weeks. (If the dressing separates while standing, shake it well to recombine before serving).
