Mascarpone Substitute - cooking recipe

Ingredients
    3 egg yolks
    1/2 cup sugar
    1/3 cup half-and-half cream
    1 (15 ounce) container ricotta cheese
    1 cup heavy whipping cream, whipped (35%, measure 1 cup after whipping)
Preparation
    In a heavy-bottomed saucepan whisk egg yolks, sugar and cream; simmer over low heat for 2-3 minutes then cool.
    Fold in ricotta cheese and whipped cream until blended.
