Braised Pork Belly - cooking recipe

Ingredients
    2 -3 kg pork belly
    1/4 cup sweet chili sauce
    1/4 cup oyster sauce
    4 tablespoons brown sugar
    4 potatoes
    1/4 cup cream
    25 g butter
    salt and pepper
Preparation
    Place Pork skin side up in a large roasting dish.
    Pour the Sauces over the top.
    Sprinkle Brown Sugar Over.
    Half fill roasting dish with water.
    Cover with foil.
    Bake in the oven 300F for 3 - 4 hours until melt-in-the mouth tender.
    Cook potatoes, drain then dry over heat.
    Mash with cream and butter.
    Steam some seasonal green veges till just done.
    Divide mash between 4 plates.
    Cut Pork into serving chunks and arrange over top with some of the cooking liquid.
    Garnish with green vegetables.
