Garlic Parmesan Primal Noodles With Scallops - cooking recipe
Ingredients

2 tablespoons olive oil
1 tablespoon shallot, chopped
2 garlic cloves, minced
4 ounces sea scallops
1/2 zucchini, cut into noodles on a spiral slicer
2 tablespoons parmesan cheese, grated
1 tablespoon fresh basil leaf, chopped
salt and pepper, to taste
Preparation

Heat the olive oil in a skillet over medium high heat. Add the shallots and garlic and cook for 1 minute.
Add the scallops and sear until done (about 3 minutes per side).
Remove from pan and add the zucchini noodles. Stir and cook noodles coating with the garlic and oil mixture. Season with salt and pepper.
Serve the noodles with the scallops and top with the fresh basil.
