Sauce Vierge - cooking recipe

Ingredients
    1/2 cup extra virgin olive oil
    1 lemon, zest of
    2 tablespoons fresh lemon juice
    1/2 pint cherry tomatoes, quartered
    1 small shallot, minced
    1/2 garlic clove, minced
    3 tablespoons fresh parsley, chopped
    salt & freshly ground black pepper
Preparation
    Place first seven ingredients in a bowl and stir to combine.
    Season with salt and pepper to taste.
