Cold Rock Lobster Salad - cooking recipe

Ingredients
    1 cup mayonnaise
    1 1/2 cups fresh asparagus, blanched and chopped
    1/2 cup green peas
    1/4 cup red bell pepper, diced
    1/4 cup yellow bell pepper, diced
    2 teaspoons lemon juice
    2 tablespoons orange juice
    1 teaspoon orange rind, minced
    1 lb cooked rock lobster meat, shredded
    salt
    pepper
    tomatoes
    watercress
Preparation
    Combine mayonnaise, asparagus, peas, peppers, lemon juice, orange juice, orange rind, and lobster in a large bowl.
    Season with salt and pepper and mix well.
    Arrange lettuce leaves on a serving platter.
    Mound lobster mixture on lettuce.
    Garnish with tomato wedges and watercress.
