Greek Lentil Stew - cooking recipe

Ingredients
    cooking spray
    1 cup chopped onion
    1 cup chopped green bell pepper
    2 teaspoons minced garlic
    2 cups peeled and diced potatoes
    1 cup lentils, washed and sorted
    1 (14 ounce) can diced tomatoes
    3 cups vegetable stock
    1 teaspoon dried oregano
    1 teaspoon dried mint
    1/2 teaspoon ground turmeric
    1/2 teaspoon ground coriander
    1 medium zucchini, sliced
    1/2 lb green beans, trimmed
    salt and pepper
Preparation
    Spray a large saucepan with cooking spray; heat over medium heat until hot.
    Saute onion, bell pepper and garlic until tender, about 5 minutes.
    Add potatoes, lentils, tomatoes, stock and seasonings; heat to boiling. Reduce heat and simmer, covered, until lentils are tender, about 25 minutes.
    Add zucchini and green beans; simmer, uncovered, until vegetables are tender and stew is thickened, about 10 minutes. Season to taste with salt and pepper.
