Chunky Lentil-Cashew Soup - cooking recipe

Ingredients
    10 ounces lentils
    6 cups vegetable broth
    1 small onion, chopped
    3 carrots, sliced
    3 stalks celery, sliced
    1 garlic clove, crushed
    salt and pepper
    2 tablespoons fresh parsley, chopped
    1 bay leaf
    1 teaspoon dried thyme
    4 ounces whole cashews
    1 (14 ounce) can crushed tomatoes or (14 ounce) can diced tomatoes
    1/2 cup lemon juice
Preparation
    Mix ingredients and simmer 1 to 2 hours on stove or 6 hours on low in crockpot until lentils are soft.
