Nif'S Wild Rice Casserole - cooking recipe

Ingredients
    1 cup wild rice, cook as directed to equal almost 4 cups cooked
    2 teaspoons olive oil
    1/2 lb mushroom, sliced
    1/2 cup onion, chopped
    1 cup old cheddar cheese, grated
    1 (19 ounce) can tomatoes, diced (juice too)
    1 teaspoon salt
    1 cup water
    1/4 cup slivered almonds, toasted (optional)
Preparation
    Saute mushrooms and onions in olive oil over medium heat in a nonstick pan.
    Mix all ingredients and add to 2 quart casserole dish and cover. Bake 1 hour at 350\u00b0F.
    Sprinkle toasted almonds on top (optional). I use them.
