Irish Croquettes : Corned Beef And Potato - cooking recipe

Ingredients
    2 cups mashed potatoes, left overs are fine seasoned with
    salt, to taste,and
    pepper, to taste
    3 cups finely chopped corned beef
    1 egg
    1 tablespoon finely chopped parsley
    Coating
    1 egg
    2 tablespoons milk
    dried breadcrumbs
Preparation
    Combine potatoes, corned beef, egg, and seasoning.
    Mix well.
    Form into croquettes.
    Dip into egg and milk mixture.
    Roll in bread crumbs.
    Fry in oil heated to about 375 degrees.
    Enjoy.
