Snowmobile Stew - cooking recipe

Ingredients
    2 teaspoons canola oil
    1 cup onion
    1 cup carrot
    1 cup bell pepper
    1 cup zucchini
    15 ounces canned white beans
    15 ounces canned black beans
    15 ounces canned green beans
    45 ounces diced tomatoes with basil and garlic
    1 1/2 cups tortilla chips
    1/2 cup parmesan cheese
Preparation
    Heat oil in large pot. Dice onion,chop carrots, bell pepper and zucchini; saute 3 to 5 minutes stirring constantly. Mix in the canned beans and tomatoes.
    Bake at 375.
    Top with torilla chips and paramesan cheese; broil 1 minute.
