Keri'S Stuffed Hot Pepper Spaghetti Squash - cooking recipe

1 medium spaghetti squash
1/2 brick reduced-fat cream cheese
2 banana peppers
6 ounces part-skim ricotta cheese
1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon pepper
1/2 cup panko breadcrumbs
Preparation

Use a fork and poke holes in the squash, Microwave for 10-12 minute.
Chop the banana peppers up into small pieces.
Mix the banana peppers and all other ingredients (except panko) together.
Once the squash is done and cooled, cut in half and scrape out the insides.
Place in colander and pat with paper towel to remove excess liquid.
Mix the squash with the cheese mixture and place in a baking dish.
Top with bread crumbs.
Bake at 375 until golden brown and bubbly and enjoy!
