Maple Bacon Sweet Potato Casserole - cooking recipe

Ingredients
    Casserole
    3 cups mashed sweet potatoes
    2 eggs, lightly beaten
    1/4 cup maple syrup
    1/2 teaspoon salt
    1/4 cup butter or 1/4 cup ghee, melted
    1/4 cup bacon grease
    2 tablespoons vanilla extract
    Topping
    1/2 cup coconut sugar
    1/3 cup almond flour
    1 cup pecans, chopped
    3 tablespoons butter or 3 tablespoons ghee, melted
    4 slices bacon, underdone and chopped into bits
    2 teaspoons vanilla extract
Preparation
    Preheat oven to 375. Combine all casserole ingredients and spread into an 8x8 or 9x9 casserole dish.
    Combine topping ingredients and sprinkle evenly across the top of the casserole filling.
    Bake at 375 for 30-45 minutes.
