The Best Ever Brown Rice Salad - cooking recipe
Ingredients

1 1/2 cups brown rice
1 red bell pepper, chopped
3 spring onions, chopped
3 tablespoons parsley, finely chopped
1 1/2 cups cashew nuts
1 lemon, juice of
5 tablespoons extra virgin olive oil
1 teaspoon balsamic vinegar
1 teaspoon Worcestershire sauce
1/4 cup sultana (optional)
1 tablespoon pine nuts (optional)
Preparation

Place the lemon juice, olive oil, vinegar and worcestershire sauce in a screw top jar and shake well.
Cook the brown rice acording to the packet instructions, drain and place in a bowl. While the rice is still warm, mix in all the other ingredients including the dressing, stir thoroughly.
Serve at room temperature.
