Quinoa And Bok Choy Soup - cooking recipe

Ingredients
    3 garlic cloves, minced
    1 tablespoon ground ginger
    1 cup quinoa, rinsed
    7 cups vegetable broth or 7 cups chicken broth
    2 tablespoons soy sauce
    2 tablespoons rice vinegar
    1 tablespoon toasted sesame oil
    1 lb shiitake mushrooms or 1 lb cremini mushroom, sliced
    6 cups sliced bok choy
    3/4 cup thinly sliced green onion
    salt and pepper
Preparation
    In a large pot combine garlic, ginger, quinoa, broth, soy sauce vinegar and oil. Bring to a boil over medium high heat. Reduce heat and summer for 15 minutes or until quinoa is tender.
    Stir in mushrooms and simmer, uncovered until mushrooms are tender. Stir in bok choy and onions; simmer for 3-4 minutes or until bok choy is wilted. Season to taste with salt and pepper.
