Creamy Pesto Chicken Sandwich - cooking recipe
Ingredients

2 ounces fresh basil
2 tablespoons almonds
1 garlic clove
2 tablespoons olive oil
2 tablespoons parmesan cheese
1 chicken breast, cooked
1/4 cup onion
1 cup Greek yogurt
1 tomatoes, sliced
oregano
salt
pepper
4 tablespoons mozzarella cheese, shredded
4 sandwich buns, toasted
Preparation

pesto: In a food processor, combine basil, almonds, garlic, olive oil, parmesan cheese, and salt/pepper.
Mix the pesto with greek yogurt. Dice or shred the chicken and combine with pesto/yogurt mixture, oregano & onion. Spoon onto sandwich rolls and top with tomato and mozzarella. Put under broiler just long enough to melt the cheese -- 3minutes. Enjoy.
