Gram'S Potato Salad - cooking recipe

Ingredients
    3 lbs potatoes, cubed i prefer them peeled but you can leave the skins if you like the flavor
    2 hard-boiled eggs, diced
    2 stalks celery, chopped
    1/2 small onion, chopped
    1 cup mayonnaise (I was given explicit instructions to use only Hellmann's)
    salt and pepper
Preparation
    Boil potatoes until tender, drain and allow to cool for about 5 minutes.
    In a large bowl fold potatoes with veggies, eggs, seasonings.
    Gently mix in mayo until everything is well dressed, this may take the whole cup sometimes not.
    Keep chilled until served.
